Low Carb Pizza Stuffed Chicken

4 boneless skinless chicken breasts
2 teaspoons olive oil
1 teaspoon garlic powder
2 teaspoons Italian seasoning, or to taste
½ teaspoon salt
1-1/2 cups shredded mozzarella cheese
24 slices pepperoni
1-1/2 cups marinara sauce
1/4 cup grated Parmesan cheese
fresh chopped basil (optional)

Preheat oven to 400ºF. Spray a 9x13 baking dish with nonstick spray.
Using a sharp knife, cut a pocket into one side of each chicken breast. Don’t cut all the way through to the other side.
Coat the chicken breasts with olive oil and season with garlic powder, Italian seasoning and salt.
Place 1/4 cup of mozzarella inside the pocket of each chicken breast. Place 4 pepperoni slices over the cheese. Close the chicken breast (you can secure with toothpicks if you want).
Add 1/2 cup of marinara sauce to the bottom of the baking dish and spread it into a thin layer. Place the chicken breasts on top. Top the chicken breasts with the remaining sauce and use a spoon to fully cover the breasts. Sprinkle remaining mozzarella cheese on top. Sprinkle Parmesan cheese and add remaining pepperoni slices.
Bake for 20-25 minutes or until the internal temperature of the chicken reaches 165F. Garnish with fresh chopped basil, if desired.
