Creamy Sausage Pasta

Ingredients
1 pound smoked sausage rope, sliced
2 tablespoons olive oil
1 medium onion, diced
4 teaspoons minced garlic
2 cups bow tie pasta
1 (14 oz) can diced tomatoes
2 cups chicken stock
1/2 cup heavy cream
1/2 teaspoon cracked pepper
1 teaspoon salt
1-1/2 cups cheddar cheese, grated
2 tablespoons green onions, sliced
Directions
In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and onion. Cook until the onion begins to soften, 1-2 minutes. Add the garlic and cook for 30 seconds or until fragrant.
Add the pasta, tomatoes, stock and cream. Bring to a boil, then cover and simmer over a low heat for 15 minutes.
Remove from the heat and sprinkle the top with cheese. Replace lid and allow to sit 5 minutes, so the cheese melts.
Garnish with green onions.
