Honey Garlic Shrimp
A healthy and simple dish that can be ready in less than 30 minutes.
Prep Time: 15 minutes (does not include marinating time)
Cook Time: 5 minutes
Total Time: 20 minutes
Serves: 4
Ingredients
1/3 cup honey
1/4 cup reduced-sodium soy sauce
2 garlic cloves
1 teaspoon minced fresh ginger (optional)
2 tablespoons olive oil
1 lb medium uncooked shrimp, peeled & deveined
fresh parsley and lemon wedges, for garnish if desired
Directions
In a small bowl, whisk together honey, soy sauce, garlic, and ginger (if using). You will use half the miture for the marinade and the rest for cooking.
Place shrimp in a large bowl or ziplock bag. Pour half the honey mixture over the shrimp and stir or shake to make sure the shrimp is fully covered with the mixture. Cover and refrigerate for 15 minutes, or up to 12 hours. Refrigerate the rest of the mixture.
Once shrimp is done marinating, heat olive in a large skillet over medium-high heat. Add the shrimp, discarding the used marinade.
Cook shrimp about 1-2 minutes on each side, or until pink and opaque.
Add the reserved mixture to the skillet and mix until shrimp is coated and cook until sauce is heated through. Remove from heat and serve with rice and vegetables. Garnish with chopped fresh parsley and lemon wedges, if desired.
