Crockpot Crack Chicken

Total Time 6 hours, 10 minutes
2 lbs. boneless skinless chicken thighs
1 oz. packet ranch seasoning mix
8 ounces cream cheese cut into cubes
1/2 pound bacon, cooked until crispy and crumbled
2 cups shredded cheddar cheese, divided
1/2 cup sliced green onions, for garnish
Place the chicken in the bottom of the slow cooker. Sprinkle dry ranch seasoning over the chicken. Top with cubed cream cheese. Cover and cook on low for 6-8 hours or high for 4 hours.
Shred the chicken with 2 forks in the crockpot. Top with bacon and sprinkle with cheese. Cover for about 10 minutes, or until cheese is melted.
Garnish with green onions. Serve on buns, over rice or potatoes.
