    Cilantro Lime Chicken

    With a fresh herb and tangy citrus flavor, this Cilantro Lime Chicken will wow your family's tastebuds.   

    Prep Time: 5 minutes

    Marinade Time: 30 minutes

    Cook Time: 18 minutes   

    Total Time: 53 minutes

    Servings: 4-6 servings

    Ingredients

    1/2 bunch of cilantro roughly one cup, stems and leaves, plus more for garnish, if desired

    zest from 2 limes, divided

    1/2 cup olive oil

    1/4 cup lime juice

    2 tablespoons honey

    2 tablespoons chili powder, plus extra for sprinkling

    1/2 teaspoon salt

    1/2 teaspoon pepper

    2 pounds boneless chicken thighs with skin on

    Directions

       To a food processor, add cilantro, zest from one lime, olive oil, lime juice, honey, chili powder, salt and pepper. Pulse until finely chopped, scraping down sides several times.

       Add the marinade to a large ziplock bag. Add chicken and turn to coat. Cover the chicken with the marinade and refrigerate for at least 30 minutes, or up to 24 hours.

    Baking Method
        

       

    • When the chicken is done marinating, take it out of the fridge and let it sit for 10-15 minutes at room temperature.
    • Preheat your oven to 425 degrees fahrenheit.
    • Heat the remaining one tablespoon of olive oil in a large ovenproof skillet over medium-high heat. Sear the chicken for 5-6 minutes with the skin side down, until they're golden brown.
    • Then flip the chicken and sear the other side for 2-3 minutes. The chicken will not be fully cooked at this point.

    s, or until chicken is cooked through with an internal temperature of 165°F. The cook time will depend on the size of your chicken thighs.

    • Transfer the skillet to the oven and bake the chicken thighs for 15-20 minutes or until the internal temperature reaches 160 degrees fahrenheit.
    • Remove the chicken from the oven, let it rest for 5 minutes, and garnish with extra lime slices and cilantro leaves before serving.

       Garnish with fresh chopped cilantro, if desired.


    Grilling Method
       Heat the grill to 350°F degrees. Once hot, clean the grill grates. Spray with grill spray.

       Using grill tongs, remove chicken from bag and place on grill over direct heat. Discard remaining marinade.

       Grill over medium heat for 6-8 minutes on each side or until chicken is cooked through with an internal temperature of 165°F. (Turn down the heat if the chicken is browning too quickly). The cook time will depend on the size of your chicken thighs.

       Garnish with fresh chopped cilantro, if desired.
