Grilled or Skillet Cilantro Lime Chicken

4 boneless, skinless chicken thighs or breasts
2 tablespoons olive oil
2 tablespoons fresh lime juice
zest of 2 limes
3 garlic cloves, minced
1/4 cup fresh cilantro, finely chopped
2 teaspoons kosher salt
Combine all marinade ingredients in a small bowl. Pour the marinade into a shallow dish or large freezer bag. Add chicken and turn to coat. Marinade in the refrigerator for at least an hour or as long as overnight.
Grill Method: When ready to cook, oil a gill or grill pan over medium-high heat. Cook chicken for 7-8 minutes on each side or until chicken reaches 165ºF in center on an instant-read thermometer. Serve with lime slices and additional chopped cilantro.
Skillet Method: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken thighs in skillet until chicken registers 165 in center ºF in center on an instant-read thermometer, about 5-6 minutes per side. Serve with lime slices and additional chopped cilantro.
