Chicken Parmesan Meatballs

Baked chicken meatballs, topped with marinara sauce and mozzarella cheese.

Servings: 24 meatballs


2 pounds ground chicken

1/2 cup parmesan, freshly grated (you can also use packaged)

1/4 cup onion, finely diced

3-4 cloves garlic, minced

1/4 cup panko breadcrumbs

1 egg

1/2 tablespoon Italian seasoning

1/4 teaspoon oregano

1 teaspoon kosher salt

1/4 teaspoon pepper

Cooking spray

1-1/2 cups marinara sauce

1 cup shredded mozzarella

Chopped fresh parsley, for serving (optional)


Preheat oven to 400 degrees F.

In a large bowl, add all of the ingredients except for the marinara sauce and mozzarella cheese.

Roll into 24 balls slightly larger than a golf ball. Place onto a sheet pan lined with aluminum foil and spray with cooking spray. Top each meatball with about 1 tablespoon of marinara sauce and mozzarella cheese.

Place in oven and bake for about 25 minutes. Garnish with parsley, if desired.
