Cajun Chicken Alfredo

Ingredients
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1/2 teaspoon of kosher salt
freshly ground black pepper, to taste
14 oz smoked sausage, sliced on the diagonal
4 cloves garlic, minced
2 (15 oz.) cans low-sodium chicken broth
2 1/2 cups heavy cream
1 pound penne pasta, uncooked
1-1/2 tablespoons Cajun seasoning
4 oz. parmesan cheese, freshly shredded
Italian parsley, for garnish, optional
Instructions
Season chicken with salt and pepper.
In large pot, heat olive oil over medium high heat. Add chicken and cook until browned and cooked through. Remove and place on a plate.
Add sausage to the pot and cook until lightly browed and cooked through. Add garlic and cook for 30 seconds, or until fragrant.
Add the chicken back into the pot. Add the chicken broth, heavy cream, dried pasta and cajun seasoning to the pot. Stir to combine and bring to a simmer over medium-high heat. Cover the pot and reduce heat to low and continue to coo for 15-20 minutes, or until pasta is tender.
Remove pot from heat and slowly stir in the parmesan cheese. Sprinkle with additional cajun seasoning, to taste, if desired. Garnish with chopped parsley and serve.
