This Beef and Broccoli Stir Fry is made with tender beef and crisp broccoli stirred in a garlic and ginger soy sauce with a little brown sugar that gives a delicate balance of sweet and savory.

Stir Fry Ingredients
1 lb flank steak, sliced thinly against the grain and cut into bite-sized pieces
2 tbsp olive oil
1 lb broccoli, cut into bite-sized pieces
1 teaspoon ginger, grated
2 cloves garlic, minced
1 tbsp sesame seeds, for garnish, optional
¼ cup low sodium soy sauce
3 tablespoons light brown sugar
¼ teaspoon red pepper flakes
1 tbsp cornstarch
½ cup water
Heat 1 tablespoon of oil in a large skillet over medium heat. Add the broccoli and cook for 4-5 minutes, or until tender. Add the ginger and garlic to the pan and cook for 30 seconds. Remove the broccoli, ginger and garlic from the pan, place on a plate and tent with foil to keep warm.
Increase the heat to high and add remaining tablespoon of oil. Season the steak with salt and pepper and add them to pan in a single layer. (You may have to cook the steak in batches to not overcrowd.) Cook for 3-6 minutes on each side until browned and cooked through.
In a small bowl, add soy sauce, brown sugar, and red pepper flakes, stir well and set aside.
In another bowl, add 1 tablespoon cornstarch and 1/2 cup water and stir until cornstarch is completely dissolved and set aside.
Lower the heat to medium low Add the soy sauce mixture and the cornstarch mixture and simmer for 3-4 minutes until it starts to thicken. Add the broccoli, ginger and garlic back to the pan and stir to combine. Garnish with sesame seeds, if desired, and serve over rice.
