Parmesan and Herb Crusted Baked Fish

My kids have never really been big fans of fish, but once I started making fish recipes like this Parmesan and Herb Crusted Baked Fish, they have developed more of a taste for it.

And since it takes less than 30 minutes to make, it’s a quick and healthy meal to make on a busy weeknight. And you can use any type of white fish—just note that thicker fish like halibut may take a few minutes longer, while thin fillets like tilapia may take less time.

Ingredients
4 white fish fillets about 6-oz. each (flounder, cod, tilapia, halibut, etc.)
1/2 cup fresh bread crumbs
1/4 cup grated Parmesan
1 tablespoon chopped parsley fresh—if using dry, only 2 teaspoons
1/4 teaspoon each: basil oregano, and thyme
1 clove garlic, minced
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil, divided

Directions
Heat oven to 400 degrees F. Oil a 9” x 13” baking dish. Arrange fish fillets in the dish, folding any tin parts under to avoid overcooking. Some fish, like tilapia, may need to be folded in half if they’re very thin—the idea is to try to make them the same thickness to cook in the same time frame.
Mix the breadcrumbs, cheese, garlic, herbs, and pepper in a small bowl. Stir in 1 tablespoon olive oil to moisten. Add the breadcrumb mixture evenly over the fillets. Drizzle the remaining tablespoon of olive oil. Bake until the topping is golden and the fish is opaque when flaked, about 10-15 minutes, depending on the thickness of the fillets.
