Smothered Pork Chops

For the Pork Chops
4 bone-in pork chops, about 3/4-1-inch thick
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon fresh ground black pepper
2 tablespoons vegetable oil
½ cup flour

For the Gravy
2 tablespoons butter, melted
1 medium onion, thinly sliced
3 garlic cloves, minced
2 tablespoons flour
1-1 /4 cup chicken broth
½ cup heavy cream
½ teaspoon fresh thyme leaves

Pat the pork chops with paper towels to remove any moisture.
   In a shallow bowl, mix together garlic powder, onion powder, salt and pepper.
Dredge the pork chops in the flour. Add vegetable oil to a large skillet over medium-high heat.
   As soon as the pan is hot, add the pork chops and sear the pork chops on each side until golden brown, about 3-4 minutes per side. Place pork chops on a plate and tent with aluminum foil to kep warm.
   In same pan, melt butter over medium heat. Add the onions, cook until soft and caramelized, stirring occasionally. Add the garlic and cook until fragrant, about 1 minute. Sprinkle the onions with flour and cook to dissolve, about 2 minutes.
   Slowly stir in the chicken broth, scraping up browned bits from the bottom of the pan. Let the liquid slightly thicken. Whisk in the cream and let simmer until thick.
   Nestle pork chops into the gravy mixture and cook for 5 minutes, or until the internal temperature reaches 145 degrees, flipping the pork chops to coat with the gravy. Serve immediately, garnished with fresh thyme.
