One Pot Ground Beef Stroganoff

This rich and creamy comfort dish is so easy and only takes about 30 minutes to make.

1 tbsp olive oil
8 ounce mushrooms, sliced
2 tablespoons butter
1/2 onion, chopped
2 cloves garlic, minced
1 lb ground beef
3 tablespoons flour
1 teaspoons paprika
4 cups low sodium beef broth
1-1/2 teaspoons salt
1/2 teaspoon black pepper
4 cups dry egg noodles
1/2 cup sour cream
freshly chopped parsley, for garnish

   In a large skillet, heat olive oil over medium heat and saute mushrooms, stirring occasionally, until tender. Transfer to a plate and set aside.
   Add the butter to the pan and let it melt. Add onions and cook until translucent. Add garlic and cook until fragrant. Add ground beef and cook until browned and cooked through. Drain any fat. Add the paprika and stir to combine.
   Sprinkle in the flour and stir for about 1 minute until the raw flavor has cooked off the flour. Slowly add the beef broth, salt and pepper. Add the noodles and bring to a boil. Reduce the heat to a simmer and cook the noodles until al dente.
   Add the mushrooms back into the pan. Add in the sour cream until heated through. Garnish with parsley and serve.
