Tater Tot Casserole
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Servings: 6
1 pound lean ground beef
1 small onion, diced
2 cloves garlic , minced
salt and pepper, to taste
1 (10.75 ounce) can cream of mushroom soup
1 tablespoon Worcestershire sauce
1 (15-ounce) can mixed vegetables
2 cups shredded cheddar cheese, divided
16 ounces frozen tater tots
Preheat oven to 350 degrees F. Butter a 13"x9" baking dish. Set aside.
Spray a 9x13 baking dish with non-stick spray and set aside.
In a large skillet over medium-high heat, add beef, onion and cook until beef is no longer pink and completely browned and onions are soft. Add garlic and cook until fragrant, 30 seconds. Drain any fat. Season with salt and pepper, to taste.
Add the mushroom soup, Worcestershire sauce, mixed vegetables and 1 cup of cheese to the pan and stir well to combine.
Pour the mixture into the baking dish. Top beef mixture with remaining cheese. Arrange tater tots in a single layer on top of cheese.
Bake at 350 degrees F. for 35-40 minutes or until tater tots are golden brown and cheese is melted.
