30-Minute Shrimp Stir Fry

Stir Fry Sauce
1/4 cup light soy sauce
1 tablespoon fresh garlic, minced
1 tablespoon fresh ginger root, minced
1/4 teaspoon red pepper flakes
1 tablespoon cornstarch
Stir Fry
3 tablespoons vegetable or olive oil
2 pounds large shrimp, peeled and deveined
1 pound bag stir fry vegetables
sesame seeds for garnish, if desired
Directions
In a small bowl, whisk together soy sauce, garlic, ginger, red pepper flakes and cornstarch until well combined and cornstarch is dissolved.
In a large skillet, heat 1 tablespoon oil over medium-high heat. Dab shrimp dry with a paper towel. Add shrimp to the pan and season with a pinch of salt. Cook for 1 to 1/2 minutes on each side until pink. Transfer to a plate.
Heat remaining 2 tablespoons oil. Add broccoli, snow peas and red pepper and cook until crisp-tender.
Pour sauce into pan and cook until thickened, stirring constantly, about 1 minute. Return shrimp back into pan and toss to coat with sauce. Garnish with sesame seeds and serve over hot rice, if desired.
