Creamy Sausage Tortellini Skillet

Ingredients
1 pound mild Italian sausage (or use hot if you prefer)
1/2 cup diced onion
2 cloves garlic
3/4 cup chicken broth
1 (14.5 ounce) can diced tomatoes, with juices
1/2 cup heavy cream
1 package (9 oz.) cheese tortellini
2 cups fresh baby spinach
1/2 cup mozzarella cheese shredded
freshly grated parmesan cheese for garnish, optional
Directions
Remove the sausage from the casings. In a large skillet over medium-high heat, add the sausage and onions, crumbling the sausage with a spatula. Cook until sausage is done and no longer pink. Add garlic and cook for 30 seconds or until fragrant. Drain fat from skillet and leave sausage mixture in pan.
Add the chicken broth, tomatoes, cream and tortellini. Stir to combine. Cook for 7-9 minutes or until pasta is tender. Stir in the spinach and let it wilt. Remove from heat. Sprinkle mozzarella cheese evenly over tortellini. Cover the skillet with a lid until the cheese melts. Garnish with parmesan cheese, and serve with garlic bread, if desired.
