Red Velvet Cake Mix Cookies

1 (15.25 oz ) box red velvet cake mix (Duncan Hines or Betty Crocker)
1 cup white chocolate chips
1/2 cup oil or butter (melted)
2 large eggs
Instructions
Preheat oven to 350 F degrees. Line 2 baking sheets with parchment paper and set aside.
In a mixing bowl, combine cake mix, oil (or melted butter) and eggs using a rubber spatula. Stir in white chocolate chips.
Using a 1-1/2 - 2 tablespoon cookie scoop, scoop batter onto the prepared baking sheets, placing them about 2-3 inches apart.
Bake 12-14 minutes. Let cookies cool for 10-15 minutes before removing from cookies sheet.
