One Pan Ravioli Lasagna

An easy version of lasagna comes together very quickly in one pan.

One Pan Ravioli Lasagna

Total Time: 25 minutes

Servings: 6 servings

Ingredients

2 tablespoons of olive oil

1 pound of Italian sausage

1/2 medium onion, diced

2 cloves of garlic, minced

1 (28 oz) can of crushed tomatoes or diced tomatoes

1 (8 oz) can of tomato sauce

1-1/2 cups of low sodium chicken broth

2 (9 oz) packages of four cheese refrigeraed ravioli

8 oz of fresh mozzarella cheese, shredded

1/2 cup of freshly grated parmesan cheese

Flat leaf parsley for garnish

Directions

   Heat oil in a large skillet over medium heat. Add onions cook until onions are soft and translucent. Add garlic and cook for 1 minute, or until fragrant.

   Add sausage and cook, breaking up with a wooden spoon. Once sausage is cooked through, add tomatoes, tomato sauce, chicken broth, and ravioli.

   Bring mixture to a boil, then reduce heat to medium and let simmer until ravioli are tender and sauce has reduced and thickened, 15-20 minutes

   Remove from heat and stir in mozzarella and parmesan.
