One Pot Stuffed Pepper Casserole

Total Time: 35 minutes
Servings: 4-6
Ingredients
1 pound ground beef
2 bell peppers (green or red), diced
1/2 cup yellow onion, diced
2 garlic cloves, minced
2 cups beef broth
1 (14.5 ounce) can diced tomatoes, undrained
8 oz can tomato sauce
1 tablespoon Italian seasoning
salt and pepper, to taste
½ cup uncooked long grain white rice
1 cup cheddar cheese, shredded
Directions
In a large high-sided skillet, add beef, peppers and onions and cook until beef is browned, cooked through and no pink remains and peppers and onions are softened, about 5-7 minutes. Add garlic and cook until aromatic, 1 minute.
Add in beef broth, diced tomatoes, tomato sauce, Italian seasoning and salt and pepper, to taste. Stir to combine well. Bring mixture to a boil.
Add in uncooked rice, reduce heat to low, cover and simmer for 25 minutes or until rice is tender.
Remove from heat and top with cheese. Cover with lid until cheese has melted.
Garnish with parsley, if desired, and serve warm.
