Ground Beef Enchiladas

Servings: 8 tortillas
Ingredients
2 cups enchilada sauce
1 pound ground beef
1 yellow onion, diced
2 tablespoons taco seasoning
1/4 cup water
8 large tortillas
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Toppings (optional) chopped cilantro, sour cream, avocado
Instructions
Preheat oven to 350 degrees.
Pour half a cup of enchilada sauce in the bottom of a 9x13-inch baking dish and spread evenly.
In a large skillet over medium-high heat, cook the ground beef and onions, breaking up the beef with a wooden spoon. Cook until beef is browned and no longer pink. Sprinkle taco seasoning over the beef and add in the 1/4 of water. Cook until water is absorbed.
Lay out each tortilla and add place 2-3 tablespoons in a line down the center. Sprinkle 1-2 tablespoons on top of the beef. Roll up the tortillas and place seam side down in the baking dish. Pour the remaining enchilada sauce over the enchilladas and sprinkle the remaining cheese on top. Bake uncovered for 20-30 minutes, or until cheese is melted.
