Crockpot Lasagna Soup

Ingredients
1 pound ground beef
1/2 onion (diced)
1 red bell pepper (diced)
1 (28 oz) can crushed tomatoes
1 (14.5 oz) can petite diced tomatoes
1 teaspoon minced garlic
1 tablespoon Italian seasoning
4 cups beef broth
12 ounces lasagna noodles
1/2 cup ricotta cheese
1 cup mozzarella cheese, shredded
1 cup parmesan cheese, shredded
Directions
In a large skillet over medium-high heat, add the beef and onions and cook until beef is browned, about 5-7 minutes. Add garlic and cook for 1 minute, or until fragrant. Drain excess grease.
Place beef mixture in crockpot. Stir in crushed tomatoes, diced tomatoes, Italian seasoning and beef broth. Cook on HIGH for 3-4 hours or LOW for 6-8 hours.
Break the lasagna noodles into small pieces and stir them in. Cook on high for 30-45 minutes until the noodles are tender.
Place in serving bowls and top with ricotta, mozzarella, and shredded parmesan cheeses.
