Crockpot Chicken Tortilla Soup

Ingredients

2 cups shredded cooked chicken

6 cups chicken stock or chicken broth

1-2 (14.5-ounce) cans diced tomatoes, drained

1 (14.5-ounce) can corn drained

1 (15.25-ounce) can black beans drained

1 (4-ounce) can diced green chiles

1/2 cup chopped onion, optional

2 teaspoons garlic, minced

1/2 teaspoon ground cumin

1/4 teaspoon chili powder

1-1/2 teaspoons salt

3/4 teaspoon pepper

Toppings (Optional)

corn tortilla strips, shredded cheddar cheese, sour cream, guacamole, freshly chopped cilantro


Directions

   In the bottom of your crockpot, place all ingredients, except the toppings. Stir to combine.

   Place the lid on top and cook on LOW for 8 hours or on HIGH for 3-4 hours.

   Add your favorite toppings and serve.
