Crockpot Chicken Stew

Ingredients
2 boneless skinless chicken breasts
1 onion diced
2 stalks celery, diced
4 carrots, peeled and sliced
2 medium russet potatoes, peeled and cut into bite-sized pieces
1 bay leaf
2 teaspoons salt
1 teaspoon garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon poultry seasoning
4 cups low-sodium chicken broth or chicken stock
1 tablespoon corn starch + 1 tablespoon cold water
chopped fresh parsley for garnish

Directions
   Place all the ingredients, except the cornstarch and parsley in the crockpot.
   Cover and cook on LOW for 6-8 hours until chicken is cooked through and falling apart.
   Remove the chicken and shred it with 2 forks. In a small bowl, mix together the corn starch and water and stir into the crockpot. Add the chicken back into the crockpot.
Cook for another 30 minutes and serve with fresh parsley.
