Chicken Pot Pie Casserole

Ingredients
For the chicken:
1-2 tablespoons olive oil
3 pounds chicken breast
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
For the Pot Pie
1 can Grands biscuits, 8 biscuits
1 tablespoon butter
1/2 onion, chopped
2/3 cup flour
3-1/2 cups chicken broth
1 cup milk
3 cups frozen peas and carrots, thawed and patted dry
1/2 teaspoon dried basil
pinch of garlic powder
Salt and pepper, to taste
1 egg, beaten and 1 tablespoon of water
Directions
Preheat oven at 375ºF degrees.
Place the biscuits on a baking sheet and bake for 8 minutes. Remove from oven and set aside. Keep the oven on.
Spray a 9x13” baking dish with non-stick spray and set aside.
While the biscuits are pre-baking, season chicken breasts with basil, salt and pepper. In a stockpot, add olive oil over medium-high heat. Add chicken and cook until golden brown and cooked through (the internal temperature of thickest part of chicken reaches 165°F. Allow to cool and shred wen cool enough to handle. Set aside.
Lower the stove temp. to medium heat. In the same pot, melt the butter and add onions and saute until translucent, about 5-7 minutes. Add flour and stir to combine. Slowly stir in chicken broth, a little bit at a time. Slowly adding it will ensure there are no lumps.
Slowly add milk and stir. Continue cooking, uncovered, while stirring frequently, until sauce thickens. When sauce has thickened to the consistency of a medium-gravy, add chicken, mixed vegetables, basil, garlic powder, salt and pepper. Stir to combine. Turn off the heat. Pour mixture into prepared baking dish and spread evenly.
Place pre-baked biscuits on top of the mixture with the baked side down and the raw side up. In a small bowl, combine beaten egg with 1 tablespoon of water. With a pastry brush, brush egg mixture over top of biscuits.
Place the casserole in the oven and bake for 10 to 12 minutes, then tent with foil and bake for an additional 10 to 12 minutes or until the biscuits are golden brown. Enjoy!
