Chicken Pesto Pasta

Ingredients
1 tablespoon olive oil
1 tablespoon butter
1/2 onion, chopped
2 teaspoons garlic, minced
1 pound boneless skinless chicken breasts, cut into bite sized pieces
2 tablespoons flour
1 teaspoon salt, plus more to taste
2-1/2 cups chicken broth
1 cup heavy cream
8 ounces penne pasta (or other short-cut pasta)
1/3 cup prepared pesto sauce
1/4 cup grated parmesan cheese
Directions
In a large deep skillet, heat the oil and butter over medium heat. When the butter stops foaming, add the onion and cook until softened and translucent, 2-3 minutes. Add the garlic and cook for 30 seconds, or until fragrant.
Add the chicken and cook for 1 minute, then sprinkle salt and flour over the chicken, and stir to coat.
Gradually stir in the broth, and then the cream. Raise the heat and bring to a boil.
Stir in the pasta noodles. Decrease the heat to a low simmer and cover the pan. Cook 12-15 minutes until pasta is tender.
Remove from heat and stir in the pesto until incorporated. Top with parmesan cheese and serve immediately.
