Ready in 30 minutes, with a sauce that's made with only 3 ingredients, but so rich in flavor, this is a great go-to meal for a busy weeknight, and it's much healthier (and cheaper) than takeout!
Chicken Lo Mein

Ingredients
For the sauce:
3 tablespoons low sodium soy sauce
3 tablespoons hoisin sauce
1 teaspoon sesame oil
For the stir-fry:
10 ounces uncooked lo mein noodles, you can also substitute spaghetti noodles
2 teaspoons olive oil
1 teaspoon sesame oil
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 cup cabbage, shredded
1 cup carrots, shredded
3 cloves garlic, minced
sesame seeds, for garnish, optional
Directions
Cook the noodles according to package instructions. Drain well and set aside.
In a small bowl, whisk together the soy sauce, hoisin sauce and sesame oil. Set aside.
In a large skillet, heat 2 tablespoons olive oil and 1 teaspoon of sesame oil over medium-high heat. When oil is hot, add the chicken and cook for 4-5 minutes on each side until browned, and cooked through. Transfer to a plate and set aside.
Add the onion, bell pepper, carrots and cabbage to the pan and cook for 3-4 minutes or until just softened. Add the garlic and cook for 30 seconds, until fragrant.
Add the cooked noodles, chicken and sauce to the pan and toss to combine. Garnish with sesame seeds, if desired and serve immediately.
