Chicken and Stuffing Casserole

1 6 oz box stuffing mix
1-1/4 cup water
2 tablespoon butter, melted
2 cups chicken breast, cooked and shredded
1/2 cup sour cream
1 10.5 oz can cream of chicken soup
3 cups mixed vegetables, thawed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
Preheat the oven to 400°F. Spray a 9 x 13 baking dish with cooking spray.
Boil 1-¼ cup water. Then, combine the hot water, stuffing mixture and melted butter. Set aside.
Add the chicken, sour cream, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt and pepper to the prepared baking dish. Mix to combine. Top with the stuffing mixture and spread in an even layer.
Bake in preheated oven at 400ºF for 25-30 minutes until the stuffing is lightly browned and the filling is bubbling. Serve warm.
