Beef and Noodles

Ingredients

1-1/2 pound beef roast, cut into 1-inch pieces

1 tablespoon butter

1/2 onion, diced

3 cups beef broth

2 bay leaves

1/2 teaspoon dried thyme leaves

1/2 teaspoon salt

1 teaspoon pepper

1 tablespoon cornstarch

1/4 cup cold water

12 ounces extra wide egg noodles

Directions

   In a large skillet over medium heat, melt the butter. When melted, add the onion and sauté until translucent. Add in the beef and cook until browned.

   Pour 2 cups of beef broth and then add in the bay leaves, thyme leaves, salt and pepper. Stir to combine and bring the mixture to a boil. Reduce the heat, cover and simmer for 20-30 minutes until the beef is tender. Watch closely and as the broth starts to cook off, slowly add in the last cup of the beef broth.

   In a small bowl, mix the cornstarch into the 1/4 cup cold water. Stir the cornstarch into the beef mixture and allow to cook for 10 minutes or until the sauce has thickened.

   While the sauce is thickening, cook the egg noodles in a large pot of water according to the package instructions.

   Serve the beef mixture over the egg noodles.
