BBQ Turkey Meatloaf
1 tablespoon olive oil
1/2 cup onion, finely chopped
4 garlic cloves, minced
2/3 cup bbq sauce
1/4 cup ketchup
1 1/4 pound lean ground turkey
1 cup Panko breadcrumbs
1 large eggs
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
chopped parsley, for garnish, if desired
Preheat oven to 350 F degrees. Grease a loaf pan and set aside.
Heat oil in a small skillet over low heat and saute onions until soft, 3-5 minutes; add garlic and cook for 30 seconds; remove from heat.
In a small bowl, combine barbecue sauce and ketchup.
In a medium bowl, use combine the turkey, garlic, onion, breadcrumbs, egg, Worcestershire sauce, 1/4 cup of bbq sauce/ketchup, salt and pepper. Be careful not to over-mix.
Press into a greased loaf pan or form a loaf on a baking sheet.
Brush remaining bbq sauce/ketchup mixture on top of loaf.
Bake uncovered for 50 minutes to an hour, or until an instant read thermometer registers 165 degrees. Remove from oven and let stand for 5 minutes before slicing. Garnish with chopped fresh parsley, if desired.
