Easy Cheesy Taco Pasta

30 Minute Taco Pasta

Ingredients
8 ounces dried shell pasta (or any short pasta)
1 pound ground beef
1/2 cup onion
1 packet taco seasoning 
1 cup salsa, mild or medium
4 oz. cream cheese, cubed
1/2 cup sour cream
1 cup shredded cheddar cheese
Fresh chopped cilantro for garnish, if desired

Directions
    Cook the pasta according to package directions. Reserve 1/4 cup of the pasta water.
    In a large skillet, cook the beef and onion over medium-high heat for 4-5 minutes or until beef is browned and onion is tender. Drain any excess fat and return to stovetop.
   Add taco seasoning and salsa and stir to combine. Add cooked pasta to skillet and mix to combine everything. Reduce the heat to low. Add the cream cheese, sour cream and cheddar cheese to the pan.
    Cook, stirring constantly, until cheeses are melted. Add reserved pasta water, one tablespoon at a time, if needed, to thin the sauce to desired consistency.
   Garnish with chopped cilantro, if desired.
