Taco Casserole

This taco casserole is full of taco flavors and so easy to assemble on a busy weeknight.

Ingredients
1 lb. lean ground beef
1 small yellow onion, finely diced
1 (1 oz) package taco seasoning
1 (16 oz.) can refried beans
1-1/2 cups shredded cheddar cheese, divided
1 (14.5 oz.) can diced tomatoes, undrained
2 cups tortilla chips, crushed
Optional toppings: diced tomatoes, sour cream, sliced olives, salsa, shredded lettuce

Directions
   Preheat oven to 350ºF. Coat a 9x13” pan and set aside.
   In a large skillet over medium heat, add the ground beef and onion, stirring occasionally and breaking up large pieces. Cook until browned and no longer pink.
   Once browned, drain any extra grease. Add in the taco seasoning and diced tomatoes. Bring to a simmer and simmer for 5 minutes, stirring occasionally. Remove from heat.
   Line the bottom of the prepared pan with 1-1/2 cups tortilla chips. Place a layer of refried beans over the chips.
   Pour the meat mixture over the refried bean and top with the cheese and remaining tortilla chips. Bake for 15-20 minutes or until the cheese is bubbly.     
   Top with favorite toppings, if desired, and serve.
