This is a family favorite go to recipe for a busy weeknight. It’s such a easy, yet delicious and budget-friendly meal that can be on the table in 30 minutes.
Chicken Bacon Ranch Casserole

1/2 lb bacon, cooked and chopped
1 lb chicken, boneless and skinless, diced
1 tbsp olive oil
1 packet dry Ranch dressing mix
8 oz pasta
1 cup mozzarella cheese, shredded
1/2 cup cheddar cheese, shredded
salt and pepper, to taste
14.5 oz Alfredo sauce
Preheat oven to 375 degrees F. Grease a 9" x 9" baking dish. Heat up a large skillet over medium-heat. Cook bacon until it’s crispy, about 7 minutes. Drain the bacon grease from the skillet and place the bacon on a paper towel to absorb grease from bacon.
Place the olive oil, diced raw chicken, and Ranch mix in a gallon size Ziplock bag. Shake sealed bag to coat thoroughly. Add the chicken to the skillet and cook until no longer pink.
Bring a pot of water to a boil and add pasta to the pot and cook according to package directions until al dente. Drain the water and add the pasta to the greased baking dish. Add the cooked chicken and Alfredo sauce to the pasta. Sprinkle the mozzarella and cheddar cheese, bacon and salt and pepper onto the top of the Alfredo sauce and place the dish into the preheated oven. Bake until it’s bubbly and the cheese is melted, about 15 minutes. Remove from oven and serve.
