Low-Carb 5-Ingredient Eggroll in a Bowl

1 lb ground sausage
1 (14-oz.) bag coleslaw mix
4 cloves garlic, minced
1 teaspoon ground ginger
1/4 cup low-sodium soy sauce
2 sliced green onions, for garnish, optional
In a large skillet over medium-high heat, brown the meat until no longer pink. Drain fat.
Add the coleslaw mix, garlic, ginger, and soy sauce to the skillet with the sausage. Sauté until it slaw mix is tender, about 5 minutes. Remove from heat and garnish with green onions, if desired, and serve warm.
