Creamy Garlic Parmesan Chicken
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 6-8
Ingredients
2 lbs bone-in skin-on chicken thighs, 6-8 pieces
salt and pepper, to season
1 tbsp butter
1 tbsp vegetable oil
2 tablespoons parsley, finely chopped (optional for garnish)
Parmesan Cream Sauce:
2 tbsp butter
7-8 cloves garlic, minced
1 cup chicken broth
2 tbsp flour
1/4 cup heavy cream
1/3 cup freshly grated Parmesan
1/2 tsp to 1 lemon juice, or to taste
Directions
Season the chicken on both sides with salt and pepper. Add the butter and oil in a large skillet over medium-high heat. When the butter melts, add the chicken skin side down and cook for 7-10 minutes until the skin is golden brown and crispy. Turn the thighs over and cook for another 7-10 minute until they are cooked through. Place the chicken on a plate and set aside.
Place the pan back on the stove. To make the parmesan cream sauce, melt the 2 tablespoons of butter over medium heat. Add the garlic and cook, stirring frequently, for 1 minute or until fragrant. Add in chicken broth, cream, flour and Parmesan cheese. Add in lemon juice, to taste. Cook until sauce thickens, about 2-3 minutes. Return chicken to the pan and spoon sauce over the chicken. Sprinkle chicken with chopped parsley, if desired, and serve immediately.
Enjoy!
