Beef and Noodles

12 ounces egg noodles uncooked
2 teaspoons olive oil
1-1/4 pounds lean ground beef
1 onion finely chopped
2 teaspoons garlic, minced
salt and pepper, to taste
1 (15 ounces) can tomato sauce
1 (15 ounce) can diced tomatoes, drained
2 teaspoons Italian seasoning
2 cups shredded cheddar cheese
2 tablespoons chopped parsley
Bring a large pot of salted water to a boil; add the egg noodles and cook until al dente, according to package directions. Drain hot water and run under cold water to stop the cooking process and prevent the noodles from sticking together.
While the noodles are cooking: In a large skillet with a lid, heat olive oil over medium high heat. Add the ground beef to the pan and cook for 4-5 minutes, breaking up the meat with a spatula.
Add the onion and cook for an additional 5 minutes, or until beef is browned and cooked through and onion is softened. Drain any fat. Add the garlic and cook for 30 seconds, or until fragrant. Season with salt and pepper to taste.
Add the tomato sauce, tomatoes and Italian seasoning to the beef and stir to combine.
Add the noodles to the pan with the beef; toss to combine.
Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes. Garnish with parsley and serve.
