Beef and Broccoli Stir Fry

Stir Fry Ingredients
1 lb flank steak, sliced thinly against the grain and cut into bite-sized pieces
2 tbsp olive oil
1 lb broccoli, cut into bite-sized pieces
1 teaspoon ginger, grated
2 cloves garlic, minced
1 tbsp sesame seeds, for garnish, optional
Sauce Ingredients:
¼ cup low sodium soy sauce
3 tablespoons light brown sugar
¼ teaspoon red pepper flakes
1 tbsp cornstarch
½ cup water
Heat 1 tablespoon of oil in a large skillet over medium heat. Add the broccoli and cook for 4-5 minutes, or until tender. Add the ginger and garlic to the pan and cook for 30 seconds. Remove the broccoli, ginger and garlic from the pan, place on a plate and cover.
Increase the heat to high and add remaining tablespoon of oil. Season the steak with salt and pepper and add them to pan in a single layer. (You may have to cook the steak in batches.) Cook for 3-6 minutes on each side until browned and cooked through.
In a small bowl, add soy sauce, brown sugar, and red pepper flakes, stir well and set aside.
In another bowl, add 1 tablespoon cornstarch and 1/2 cup water and stir until cornstarch is completely dissolved and set aside.
Lower the heat to medium low Add the soy sauce mixture and the cornstarch mixture and simmer for 3-4 minutes until it starts to thicken. Add the broccoli, ginger and garlic back to the pan and stir to combine. Garnish with sesame seeds, if desired, and serve over rice.
